Originally founded in 2013 as Rookwood Brewhouse with the intent of pioneering a local Melbourne Sake brewery, initially planning to complement the (now shuttered) original Australian Sake producers of Go-Shu in Penrith NSW.

So we did that for a while and in 2017 we changed our name to better reflect our range of production as we started making Shochu, and also to highlight our carefully crafted Absinthe and Gin offerings.
